Today some very nice person brought in mangoes to our office. I'm not entirely sure why, but I've been cravin' me some mango!! The bag had a nice mix of ripe-ready-to-eat and some a little on the greener side. I peeled and ate a small ripe one and man it took me back...
Just the aroma of a ripe mango reminds me of trips to Kona to visit my grandma or running around my friends house up the street from mine!! Ahhh...those were the days!! It also got me thinkin' of different ways I like to eat mango. I definitely love COLD ripe mango and I do prefer to peel and slice it so I can enjoy the mango without all its juices running down my chin! But I also like to make "shoyu mango." Not sure if that's a correct culinary term, but shoyu mango is a slightly green mango marinated in a shoyu, sugar, vinegar, and black pepper mixture. I normally throw in a bit of water to settle it down a bit! This is my second favoritest way to eat mango! This might also have been the first real "dish" I made as a child! LoL!! The sweet and sour flavor reminds me of the days when I could actually climb a mango tree! LoL!!So do you have any favorite childhood snacks? What about something that you eat and it automatically jets you back 5, 10, *gulp* 20 years??
I have a baby shower/potluck today and had no idea what to take!! I took a look at the sign-up sheet and we didn't have any type of veggies really. So as I'm trying to lose weight I thought I would bring a salad. Costco has this AMAZING and EASY oriental chicken salad, but we've been eating that so much I wanted something different. So I decided on making a Tofu Salad. I kind of wondered why it was named Tofu instead of Watercress...I mean the watercress is more of the main attraction than the tofu...but in any case...here it goes!
So to make the tofu salad you just layer these ingredients. I normally like to rotate between colors to give it more of a visual appeal. You can't really see it, but at the top is some canned salmon. I've seen variations of the recipe with tuna or even no fish. I like to use the salmon cuz it's healthy, but I'm not a huge fan of Bumble Bee Salmon, but it was the cheapest.
And to make the salad dressing you combine all these items as well as diced garlic in a sauce pan and bring to a boil. Once its cool, you toss over the salad. Oh and by the way the big container of white stuff is sugar.
Here's a before shot of the layered salad. I normally wait to just before its time to eat to throw on the dressing!! Looks yummy and let me tell you it was!!!
And here's an after shot during lunch. You can see that we've really dug in!! So if you wanna keep eating healthy, but are getting bored with traditional lettuce try some watercress salad...its good stuff! I'm even thinking about using some bok choy and making an oriental chicken one too!
